I came to EPCC in 1985 after completing my graduate degree at UTEP. I am a dietitian by profession and had been practicing in the field of Nutrition and Dietetics for 8 years before discovering that I loved teaching nutrition and wanted to be a part of a higher education institution. Nutrition had become a passion and I knew I wanted to dedicate my life to education in order to help others improve their well-being through nutrition, fitness and the other aspects of wellness. Since becoming a full-time tenure track professor and Coordinator of Health Professions and Related Sciences in 2014, I have had the opportunity to develop the Border Health Issues Certificate of Completion program, bringing it from virtually a non-existent program initiated in 2011 to one that has slowly emerged with several students completing the program.

I have taught Nutrition to a variety of students including those in health sciences, kinesiology, culinary arts programs; developed and taught a Dental Nutrition class which has resulted in increased pass rates in the nutrition portion of the licensure exam of EPCC Dental students. I have guided students to pursue their health careers and occasionally inspired a student or two to consider a career in nutrition and dietetics! I have actively contributed to the college through service on multiple college committees and represented the college at the state level. I continue to further the field of nutrition and wellness through my professional service and engagement.
