Carrot Cake (Sunshine ‘n’ Snow)Ingredients: 150g self-rising flour, 100g ground almonds, 50g raisins, 50g walnut halves, roughly broken, 4 tsp ground mixed spice, 1 tsp bicarbonate of soda, 3 eggs, 100ml sunflower oil, 3 tbsp semi-skimmed milk, and 300g carrots.
For Frosting: 150g full-fat cream cheese and 1 medium orange.Cooking Method: Preheat the oven to 180 degrees and meanwhile, grease a springe form cake tin with baking parchment. In a bowl, mix bicarbonate of soda, flour, raisins, almonds, mixed spice, and walnuts.
Make a well in the center of the mixture. Take another bowl, add oil, milk and eggs in it then whisk them well. Add these ingredients in the first batter then mix them well. Pour the mixture in the cake tine and bake for 1 hour.
