Banana is widely produced in the Philippines, India, and other countries in South East Asia. It is an edible food produced by several kinds of large herbaceous flowering plants of the genus Musa. In some countries, bananas are used for cooking plantains. A banana plant has multiple uses. The leaf is commonly used as dining plate; a favorite vegetable known as the male flower of the banana; a popular vegetable that can be found on the pseudostratified inner core of the banana; the sap is mainly used as an inedible ink; animal feed in a composite mixture with other feedstuffs are also found on sap.

The banana sap can be obtained from the psuedostem, the peels, or from the flesh. It contains special properties that has relation to various phenomena such as permanent staining of cloth and fiber and antibleeding and antioxidant properties. Using high performance of liquid chromatography-electrospray ionization-mass spectometry (HPLC-ESI-MS) indicated the presence of phenolic and aromatic compounds through analization of banana sap.
